Linux = OS.
(L)Ubuntu, Debian, etc = Distros.
Choosing a distro depends on your system hardware.
I'd recommend checking out Ubuntu first, and if it feels laggy, give Lubuntu (Lite Ubuntu) a try.
And if you want to keep that windows taskbar style, try Linux Mint, you won't spot any difference from it and Windows 7.

Mami Tomoe: Use Debian 9 or Ubuntu 18. Both behave very similarly and are rather easy to use. What you also should take a look at are the support life cycles / time lines which give you an idea on how long the software is updated. After that you should upgrade to a newer version which can be a painful process depending on the software you're running on the server.
Debian used to be the most popular Linux distro for servers but Ubuntu has actually superseded it and is the current no 1. It's important to know though that Ubuntu is based on Debian. You will find a lot of support material like tutorials for both.

It costs a little more though.
Linux is used on much more servers though and you will also find more tutorials. It doesn't cost extra and is free open source software with a huge community behind it. This also means that there is more software for it and that it is more secure.
So if you have enough time to read some Linux tutorials and are not forced to use a Microsoft tech stack I see no good reason why you should go with Windows instead of Linux.
I recommend first that you learn how to use the terminal Shell and the commands line properly. You can find a plethora of guidelines on how to do so if you're an absolute beginner.
DC has writtenI guess the biggest advantage is that you can use a graphical interface instead of a console.
You can still install a GUI though, and then install VNCserver on the server side, and use VNCViewer, for remotely accessing the server, which makes it way easier to use it, keeping Debian on the lead.
So my opinion is, if you want to go for servers, always use Linux.
